Pop-up restaurants and art galleries have been appearing in cities around the country and now the idea is starting to take off in Wyoming.
Laramie chef Lucas Barbulas has two pop-up restaurant events planned in the next couple weeks. He says the idea of opening a restaurant or art gallery for a single night or a few days is a concept that’s been around for decades.
“It’s an old idea,” he says, “but one that’s been recently more prevalent, especially in the restaurant profession, using either unused restaurants or restaurants that aren’t being used for the day for a specific reason.”
May 1, Barbulas will cater a pop-up art gallery with artist Kelly Dunlap in Laramie’s downtown train depot. And on May 11, he’ll host a Mother’s Day Brunch at Big Dipper ice cream parlor. Barbulas says he specializes in vegan dishes—although meat is on the menu, too.
